Nose: Floral beeswax and nutty marmalade-like aromas

Mouth: Refreshingly light on the palate, subtle apricot and honey characters. Predictable sweet but not cloying.

Vinification: The honey is extracted from beehives, while it is fresh and runny it is blended with spring water until it reaches the fermentation sweetness. Yeast is added and fermented to 12.5% alc. Fined and filtered ready for bottling.

Enjoy together with: Dessert or cheese. Serve chilled or over ice.

Awards and recognitions: Awarded a gold medal and ‘Best pure varietal mead’ at the International Mead Festival competition in the USA.

About the producer: Three generations of vignerons. Everyone born and bred in McLaren Vale. But Mark Maxwell inherited more than a love for the vine and the Vale. It’s in his blood to think beyond the ordinary. To innovate. To build everything himself. To go against the grain, and even the grape. It’s this family, after all, that pioneered the mead industry in Australia, and set the standard for honey wine globally. After a decade or more of experimentation with different honey’s and yeasts the famous Maxwell Honey Mead was born. The first commercial label was released in 1961 and with it, the birth the Australian mead industry.
