Vinification: Grapes from distinctive Napa Valley AVAs are harvested at peak ripeness September to October. Destemmed and put into temperature controlled tanks for cold soak of 3 days. Native fermentation starts and then coinnoculated with select strains. Pumpovers 2x daily for 10-12 days for optimal tannin and texture extraction. Drained and lightly pressed to barrels for native MLF in French oak (45% new). Racked 3x during aging of approximately 20 months. Lightly filtered before bottling.

Vintner, Sean Roney: Dedication to quality dominates the winemaking for Sabotage. I want wine that offers richness, complexity, and balance with each sip. I chose the Cabernet grapes that make up Sabotage from several of the most respected sub-appellations throughout Napa Valley and long-time Cabernet growers who have been partners with my family from the beginning. These relationships allow me diversity in sourcing. I find this important because diversity helps develop layers of complexity that span the range of Cabernet’s impact on the palate. When choosing the Cabernet for the final blend, I considered each lot individually in terms of the grape as well as at the different barrels used for aging. I felt that using this holistic approach was the best method to bring out the true essence of the Cabernet grape.

The producer’s personal opinion about the product:Vinter, Sean Roney wouldn’t make a wine that he didn’t believe in, he wouldn’t put it out there under the Sabotage label. At VWE we’re delighted to share this wine. A classical expression of Napa Cab with some bottle age which has aided in integrating and coalescing the wine. We feel Sabotage delivers on the promise of Napa Valley.
