Other information: Everyday Glendalough Distillery full time forager, Geraldine Kavanagh, takes to the mountains with her wicker baskets to pick what’s in season throughout the year. The botanicals are brought back fresh to the distillery within hours of being foraged, to be distilled in small batches of less than 250 litres. The cut points are determined batch by batch by smell and taste (never timed or automated).
Our Wild Botanical Irish Gin takes a year to make. Wild botanicals change with the seasons. Fresh herbaceous flavours foraged in early Spring, floral notes from Summer meadows, forest fruit and berries finish with warm Autumnal and Winter spices. Distilling the botanicals fresh within hours of being picked is the key to capturing their essential oils and giving each bottle a real sense of a place in time.
Information about the producer: Glendalough is a deep, glacial valley nestled in the Wicklow Mountains. Just south of Dublin, County Wicklow is renowned for its natural, scenic beauty and is known as “the garden of Ireland”. Glendalough is also renowned for its 6th century monastic settlement founded by St Kevin – a legendary monk and the man on our bottle. Monasteries like Glendalough were the birthplace of distilled drinks. At Glendalough Distillery we progressively-craft luxury spirits that evoke a profound sense of place, an appreciation of the wild flavours within, and a recognition of what it took to capture them. Our GINS are fresh-distilled from hand-foraged, wild botanicals in the Wicklow mountains.
